Propyl gallate (PG), also known as propyl gallate, is a synthetic oil-soluble antioxidant. Oil-soluble antioxidants are phenolic compounds, including butyl-hydroxyanisole (BHA), dibutyl-hydroxytoluene (BHT), tert-butylhydroquinone (TBHQ) in addition to PG. They can provide hydrogen atoms to combine with the free groups generated by the automatic oxidation of oil, forming a relatively stable structure and blocking the automatic chain oxidation process of oil.
