β -galactosidase is mainly used in the dairy industry. Convert low sweetness and low solubility lactose to sweeter, more soluble monosaccharides (glucose and galactose); Reduce the possibility of crystallization of lactose in ice cream, concentrated milk and evaporated milk, and increase sweetness. In the baking industry, lactose, which cannot be used by normal yeasts, can be made available by hydrolysis to glucose. Lactase and lysozyme are often added to milk in many European countries for infants to drink because of the lack of normal lactase in their intestines, which leads to diarrhea after feeding milk.
