Monoethyl Fumarate CAS 2459-05-4

Monoethyl fumarate is an excellent anti-mildew agent, referred to as MEF, which can inhibit the growth of mold, prolong the storage period of food and feed, and has little toxicity and little irritation to skin and mucous membrane. It is expected to become a new anti-mildew agent for food and feed. It is a white or light red crystalline solid at room temperature, soluble in water and ethanol. It is the replacement product of fumaric acid and its dimethyl ester. It can also be used to produce a highly reactive organic intermediate fumarate monoacyl chloride. Adding a small amount of anti-mildew agent which can inhibit microbial growth in food and feed is the most commonly used anti-mildew method. At present, the widely used chemical anti-mildew preservative mainly includes benzoic acid and its salts, sodium diacetate, propionic acid and its salts, sorbic acid and its salts, fumarate esters and so on. However, organic acids and their salts had a good inhibitory effect only under acidic conditions, and the antibacterial effect was greatly affected by DH.
